Ingredients

For the cream:

  • 1 avocado (s), ripe
  • 0.5 tablespoon ½ lemon juice, freshly squeezed
  • 0.5 clove ½ garlic, chopped
  • salt and pepper

For the scallops:

  • 2 scallop (s)
  • some lemon juice, freshly squeezed
  • salt and pepper
  • 1 tablespoon oil (lemon oil), or olive oil
  • 1 clove garlic, lightly crushed
  • 1 sprig rosemary

Instructions

  1. Avocado cream:
  2. Peel the avocado and place in a tall blender, immediately puree with the lemon juice (or pass through a sieve), season with garlic, salt and pepper.
  3. Drizzle the scallops with lemon juice, season with salt and pepper. Let the lemon oil get hot in a grill pan, add the garlic clove and rosemary sprig and fry briefly. Add the scallops and fry for 2 minutes on each side.
  4. During this time, arrange the avocado cream on the plates. Spread the fried scallops on top of the avocado cream and serve immediately.
