Scrambled Eggs with Herbs

My favorite way to cook eggs is scrambled eggs. Such scrambled eggs are prepared in a pan, with constant beating.

Servings: 8

Ingredients

  • Large eggs – 16 pcs.
  • Butter – 4 tbsp
  • Dijon mustard – 1 tbsp
  • Fresh parsley leaves (chopped) – 1/4 cup
  • Chives (chopped) – 1/4 cup
  • Greens (parsley and chives) for serving
  • Salt
  • Ground black pepper

Directions

  1. Melt the butter in a large skillet, pour the lightly beaten eggs into the skillet, sprinkle with about 1/4 teaspoon of salt and pepper, and cook the scrambled eggs, whisking constantly, for about 5-7 minutes.
  2. Add mustard, chopped parsley, and chives to the pan. Continue to cook the scrambled eggs, whisking for 1-2 minutes, until the eggs are completely fried.
  3. Transfer the finished scrambled eggs to a plate and sprinkle with parsley and chives.
