Ingredients
- 4 slices salmon, smoked
- 6 large egg (s)
- 1 shot mineral water
- salt and pepper
- 1 bunch chives, cut into rolls
- 1 tablespoon butter
- 4 slices toast
- Salad, mixed
- Dressing your choice

- Lay out 4 small portion molds (e.g. espresso cups) with cling film and on each one a slice of smoked salmon so that they hang a little over the edge.
- Whisk eggs with mineral water, salt and pepper. Chives rolls added. Heat the butter in a pan and let the eggs set while stirring. Fill the molds while it is still warm and press in firmly with the back of a teaspoon. Cover with the overhanging salmon as tightly as possible.
- Roast the slices of toast, cut out rounds. Put some mixed salad with dressing on each plate, place slices of toast next to it, top it with a salmon dish
