Ingredients

  • 500 g beans, dried white
  • 2 bunches soup vegetables (carrots, celery, leek)
  • 500 g onion (s)
  • 2 cloves garlic)
  • 500 g potato (s)
  • 600 g tomato (s)
  • 200 g ham, (Katenschinken)
  • 2 tablespoon oil, neutral
  • 1 teaspoon salt
  • 2 teaspoons paprika powder, noble sweet
  • 2 part (s) marjoram
  • 2 pinches cayenne pepper
  • 1 green pepper (s)
  • 3 tablespoon tomato paste
  • 200 g arlic sausae, or Mettwurst
  • possibly white wine vinegar

Instructions

  1. Soak the beans in boiled, cold water (approx. 1.5 l) for approx. 12 hours. Let the beans cook in the soaking water for about 1.5 hours over low heat.
  2. Clean and wash the soup greens and cut into small pieces. Peel and chop the onion and garlic, peel, wash and dice the potatoes. Peel the tomatoes and cut into pieces.
  3. Dice the bacon, fry in the oil until crispy, fry the onion until translucent, add the garlic, the potato cubes, the soup greens, the tomatoes, the spices and 2 cups of water and cook for about 30 minutes. Clean, wash and dice the peppers and cook in the vegetables for 10 minutes.
  4. Mix the beans with the tomato paste into the vegetables. Cut the sausage into slices and heat it in the soup. Sprinkle the soup with parsley on top.
  5. Add 1 - 2 tablespoons of wine vinegar to taste.
