First put the yeast with a pinch of salt and a pinch of sugar in a small bowl with a lid, shake a little from time to time so that it can liquefy.
In the meantime, put the two types of flour in a large bowl and stir together. Then fold in the slightly smaller chopped walnuts and pumpkin seeds as well as the crushed flax seeds, sunflower seeds and the salt. Make a well in the middle and add the dissolved yeast with the honey stirred in the water. Now everything is kneaded together. I always do this with a spatula.
Then cover the dough with a warm / damp tea towel and place in a warm place to rise for about an hour.
Now preheat the oven to 230 ° C convection. During this time I knead the dough again properly, you may need a little flour so that nothing sticks anymore, and at the end I throw it several times on my floured shelf. Then I shape my loaf of bread and place it on a baking sheet lined with parchment paper. I put a bowl of water next to it.
After 10 minutes at 230 ° C, I turn the temperature down to 200 ° C for another 30 minutes.
Then take the bread straight out of the oven and leave to cool on a wire rack covered with a kitchen towel.
Tip: The whole recipe can of course also be cut in half if you don`t need such large quantities of bread.
