Ingredients
- 2 large bananas, mashed
- 2 egg (s)
- 1 ½ cup flour
- 0.5 ½ cup nuts, ground (hazelnuts, walnuts or almonds)
- 2 teaspoons baking soda
- 1 teaspoon cinnamon powder
- 0.5 ½ cup applesauce, unsweetened if possible
- 5 drops vanilla extract
- 0.5 ½ cup milk

- Mix all ingredients up to and including vanilla extract with the mixer. Then slowly add enough milk to form a smooth dough. Then add stevia in very small amounts until the dough has reached the desired sweetness. Note: The muffins taste a little less sweet than the batter! Then distribute the dough in muffin molds and bake at 190 ° C for 15-18 minutes.
- Tip:
- Depending on the type of stevia product you use (drops, powder, diluted powder), the amount required varies. I use the diluted powder, where one teaspoon of stevia is equivalent to one teaspoon of sugar, about 1/4 to 1/2 cup of this is needed.
