Ingredients

  • 100 g nuts, round
  • 100 g rice flour
  • 125 g suar, brown
  • 0.5 ½ pack baking powder
  • 1 packet vanilla sugar
  • 1 pinch (s) salt
  • 30 g mararine, soft
  • 150 ml orange juice, more if necessary
  • 50 g apricot jam
  • 50 g chocolate, dark, chopped, to taste
  • 50 g powdered suar, for sprinklin

Instructions

  1. Preheat the oven to 180ºC.
  2. Mix the nuts, flour, sugar, baking powder, salt and vanilla sugar together well. Add margarine. Mix briefly. Add orange juice and stir vigorously for a minute. Briefly mix in the chocolate.
  3. Line a muffin tin with paper liners. They are important as the muffins are very fluffy. Put about one tablespoon of batter in a mold, put a teaspoon of jam on top and cover again with one tablespoon of batter. Do the same with the rest of the dough.
  4. Bake muffins for about 20 minutes. They`re done when they get a light tan on top. Let cool in the tray. Take out carefully, dust with icing sugar if you like and serve.
  5. The jam, juice and nuts can be chosen to taste.
