Kefir Muffins with Cherry Jam and Nuts

Homemade kefir muffins with cherry jam and walnuts prepared according to this recipe are simply delicious! Fragrant, with a soft and slightly moist crumb, easy to prepare and from available products. For a quiet family tea party on a cold winter day – great pastries!

Ingredients

  • Flour – 2 cups
  • Kefir – 1 glass
  • Thick cherry jam – 0.5 cups
  • Eggs – 2 pcs.
  • Sugar – 1 glass
  • Vanilla sugar – 8 g
  • Butter – 50 g
  • Vegetable oil – 50 g
  • Soda – 0.5 teaspoon
  • Walnuts – 40 g
  • Cinnamon – 1 teaspoon (optional)

Directions

  1. Combine eggs, sugar and vanilla sugar in a bowl.
  2. Beat eggs with sugar until firm foam, add soft butter.
  3. Whisk until smooth, add sunflower oil.
  4. Add thick cherry jam. The cherries in it must be pitted.
  5. Then pour in kefir at room temperature.
  6. Beat the ingredients with a mixer for 10 seconds.
  7. Pour the sifted flour and baking soda into the resulting dough base. There is no need to extinguish soda.
  8. Knead the dough, add the walnuts, chopped to medium size crumbs. Also, if desired, you can add ground cinnamon, I did not add.
  9. Stir in the nuts with a spatula. The finished dough is similar in consistency to pancake dough.
  10. Divide the dough into molds. I ended up with 8 triangular cupcakes and a fairly large size. If the oven is in muffin molds, you get 12-14 pieces. You can also bake one large cupcake on kefir in a mold with a hole in the middle.
  11. Bake muffins on kefir, with cherry jam, in an oven preheated to 180 degrees for 35-40 minutes.
  12. Remove the prepared kefir cupcakes from the molds, cool. Homemade muffins with cherry jam and walnuts are ready to serve.
