Australian Muffin with Banana, Coconut, Nuts and Cinnamon

A simple and unusual muffin with bananas, coconut, cinnamon and nuts. A great option when there is little time for baking.

Ingredients

  • Medium bananas – 4 pcs.
  • Nuts (any) – 0.5 cups
  • Coconut flakes – 0.25 cups
  • Butter – 60 g + for greasing the mold
  • Egg – 1 pc.
  • Flour – 190 g + for sprinkling the mold
  • Brown sugar (or regular) – 100 g
  • Ground cinnamon – 0.5 teaspoon.
  • Baking powder – 1 sachet (10 g)
  • Soda – 0.5 teaspoon.
  • Salt – 0.25 teaspoon
  • Semolina (optional)
  • Vanillin (optional)

Directions

  1. In a bowl, mix 180 g flour, 0.25 teaspoon. salt, 0.5 teaspoon. cinnamon, 10 g baking powder and 0.5 teaspoon. soda.
  2. Melt 60 g of butter over low heat on the stove in a ladle.
  3. Cut 4 medium ripe but strong bananas into slices.
  4. And we make mashed potatoes from them in a convenient way: using a fork, potato grinder or blender. We make mashed potatoes without fanaticism – let the banana pieces remain.
  5. Add 100 g brown or regular sugar. We mix. Add melted butter and mix again.
  6. Add one egg and mix again. You can add a pinch of vanillin.
  7. Add dry mixture to wet mixture and mix thoroughly again.
  8. Chop half a glass of any nuts (I have walnuts) in a blender, not very finely. Add them to the dough.
  9. Add 0.25 cups of coconut. Mix everything well.
  10. Preheat the oven to 180 degrees. Grease the mold (I have a diameter of 21 cm) with butter and sprinkle with flour or semolina.
  11. Pour the dough into a mold, put in the oven and bake a banana cake with nuts for 40-50 minutes until a dry skewer.
  12. If the top of the cake is burning, cover with foil. If the top does not burn, but simply turns very brown, do not cover – the crust is very tasty.
  13. After baking, let the cake cool for 10 minutes and remove it from the mold. The top of the cake can be decorated with any icing or icing sugar. An Australian muffin with bananas, coconut, nuts and cinnamon can be used as a sponge cake.
