  • 125 g quark
  • 1 pinch (s) saffron, letter
  • some lemon juice
  • 1 teaspoon mustard
  • Pepper, from the mill
  • salt

Instructions

  1. Whisk the egg yolks with the mustard, pepper and salt. Stir in the rapeseed oil drop by drop, stirring constantly. Season to taste with lemon juice. Add the saffron and stir in the quark. If necessary, season again with pepper and salt.
