Ingredients
- 2 tablespoon oil, (soybean oil)
- 1 bunch spring onion (s)
- 5 clove (s) garlic, crushed
- 1 tablespoon ginger root, grated
- 2 tablespoon curry powder
- 1 teaspoon cinnamon powder
- 1 teaspoon coriander powder
- 500 g minced beef, lean
- 3 medium tomato (s)
- 3 large egg (s)
- 1 pinch (s) salt

- Separate the spring onions from the greens, peel them and cut into rings. Also cut the greens into rings and set aside. Peel the garlic cloves and put them through the garlic press. Peel and grate the ginger root. Cut the chilli peppers lengthways and core and also cut into strips.
- First add the curry, cinnamon and coriander to the heated oil until it smells fragrant. Then sauté the onions, garlic and ginger. Add the minced meat and fry until crumbly. Then add the onion greens. Season to taste with a little salt. Cut the tomatoes into boats, add them to the pan and let simmer a little longer. Whisk the eggs, season with salt, add and let set
- Basmati rice tastes good with it. If there are coriander leaves on hand, garnish the rice with them, otherwise with a bunch of parsley.
