- 1 kg spelled flour (type 630)
- 5 g yeast
- 1 teaspoon honey
- 2 teaspoons, heaped salt (Himalayan salt), coarse
- 0.5 liter ½ water, lukewarm. approx.
- 50 g pistachios
- 100 g sunflower seeds

- Put the flour in a large bowl, make a well and add the yeast and honey. Fill with lukewarm water and cover and let rise for half an hour.
- Then add the rest of the ingredients except for the water and mix well. Gradually add the water and knead until you get a nice, firm dough.
- Cover the dough in a bowl with cling film and place in the refrigerator at 8 ° C for 8 hours. Then knead the dough again, shape it into a nice loaf of bread and let it rest for another 2 hours at room temperature.
- Preheat the oven to 220 ° C, put a small bowl of water in the oven. Bake for 1/4 hour on the 2nd rack from the bottom at 220 ° C, then switch back to 185 ° C and finish baking for another 50 minutes.
