Spinach Salad with Pasta and Beans

For this salad, you need to boil curly pasta and combine it with beans, spinach leaves, tomatoes, onions, and cheese.

Ingredients

  • Curly pasta – 300 g
  • Fresh baby spinach leaves – 150 g
  • Small white beans, canned (washed and drained) – 400 g
  • Feta cheese (crumbled) – 1 cup (110 g)
  • Dried tomatoes, not in oil (sliced) – 1/4 cup
  • Green onions (chopped) – 1/4 cup
  • Chopped lemon zest – 1 teaspoon.
  • Fresh lemon juice – 2 tablespoons
  • Olive oil – 2 tablespoon.
  • Fresh oregano (sliced) – 1 tablespoon.
  • Fresh thyme (chopped) – 1 tablespoon.
  • Garlic (chopped) – 2 cloves
  • Salt – 1/2 teaspoon.
  • Ground black pepper – 1/2 teaspoon.
  • Hard cheese like Parmesan (chopped into thin strips)

Directions

  1. In a large bowl, combine spinach leaves, beans, feta cheese, sun-dried tomatoes, green
  2. onions, lemon juice and zest, olive oil, oregano, thyme, garlic, salt and black pepper, stir, cover and leave the spinach salad at room temperature for 2 hours.
  3. Boil the pasta in salted water until al dente, according to the instructions on the package. Throw the finished pasta in a colander, reserve 1/4 cup of water in which it was cooked.
  4. Transfer the pasta to a bowl of spinach salad, pour in enough of the reserved water and mix well.
  5. Serve spinach salad immediately, sprinkle with cheese.
