For this salad, you need to boil curly pasta and combine it with beans, spinach leaves, tomatoes, onions, and cheese.
Ingredients
Curly pasta – 300 g
Fresh baby spinach leaves – 150 g
Small white beans, canned (washed and drained) – 400 g
Feta cheese (crumbled) – 1 cup (110 g)
Dried tomatoes, not in oil (sliced) – 1/4 cup
Green onions (chopped) – 1/4 cup
Chopped lemon zest – 1 teaspoon.
Fresh lemon juice – 2 tablespoons
Olive oil – 2 tablespoon.
Fresh oregano (sliced) – 1 tablespoon.
Fresh thyme (chopped) – 1 tablespoon.
Garlic (chopped) – 2 cloves
Salt – 1/2 teaspoon.
Ground black pepper – 1/2 teaspoon.
Hard cheese like Parmesan (chopped into thin strips)
Directions
In a large bowl, combine spinach leaves, beans, feta cheese, sun-dried tomatoes, green
onions, lemon juice and zest, olive oil, oregano, thyme, garlic, salt and black pepper, stir, cover and leave the spinach salad at room temperature for 2 hours.
Boil the pasta in salted water until al dente, according to the instructions on the package. Throw the finished pasta in a colander, reserve 1/4 cup of water in which it was cooked.
Transfer the pasta to a bowl of spinach salad, pour in enough of the reserved water and mix well.
Serve spinach salad immediately, sprinkle with cheese.
