Squid in Garlic Sauce

For everyone who loves salads without mayonnaise, this delicious recipe is a godsend! Squid in garlic sauce, very tender, aromatic! And if the squid appetizer salad is infused for several hours – it’s just magic, no one will remain indifferent! Cook for health!

Ingredients

  • Squids – 300-400 g
  • Garlic – 2-3 cloves
  • Fresh parsley – 1 small bunch
  • Olive oil – 50 ml
  • Wine vinegar – 1-2 tbsp
  • Sugar – 1/3 teaspoon.
  • Salt to taste
  • Ground black pepper – to taste

For brine:

  • Salt – 1/2 teaspoon
  • Bay leaf – 1-2 pcs.
  • Peppercorns – 1 teaspoon
  • Spices for fish – 1/2 teaspoon.
  • Water – 1 l

Directions

  1. Squid wash and clean. Prepare the brine: add all the components of the brine to boiling water and boil for a couple of minutes.
  2. Boil squids in brine: small – 10 seconds from the moment of boiling, large – 15 seconds.
  3. For the sauce, finely chop the parsley, add chopped garlic, vinegar, salt, sugar, black pepper and olive oil. At this stage, try the garlic sauce and adjust it to your taste (some like it sour, some sweeter, etc.).
  4. We take out the finished squid from the brine and cut into rings or strips.
  5. Combine still warm squids with sauce and let it brew for at least 20 minutes.
  6. Squid appetizer in garlic sauce is ready! Fast, simple and delicious!
