Ingredients

  • 750 g strawberries
  • 2 egg whites
  • 200 g cream
  • 1 packet vanilla sugar
  • 3 egg yolks
  • 4 tablespoon powdered sugar
  • 1 pinch (s) salt

For the sauce:

  • 100 g marzipan raw mixture
  • 3 tablespoon amaretto
  • 2 egg yolks
  • 1 tablespoon powdered sugar
  • liter ⅛ Marsala

Instructions

  1. For the sauce, chop the marzipan with a knife and stir with the amaretto until smooth.
  2. In a saucepan or bowl, beat the egg yolks with the powdered sugar until frothy. Place the saucepan or bowl on a bowl filled with hot water to warm the yolk mixture. Then beat the Marsala under the cream until it becomes frothy. Stir in the marzipan and amaretto mixture and let the finished sauce cool down. Preheat the oven to 250 ° C.
  3. Wash the strawberries, pat dry and pluck the goblets. Spread on 4 ovenproof plates or flat bowls.
  4. First beat the egg whites with the salt, then the cream with the vanilla sugar until stiff. Finally, stir the egg yolks with 2 tablespoons of powdered sugar until they are white. Pour the egg whites and cream into the egg yolk cream and spread over the strawberries. Bake on the top shelf in the oven (gas 6; convection 230 ° C) for 3-5 minutes. Dust with powdered sugar and serve with the sauce.
