Ingredients

  • 200 g butter, or mararine, melted
  • 6 egg (s), separated
  • 250 grams sugar
  • 1 lemon (s), juice it
  • 300 grams flour
  • 2 pinches salt
  • 0.5 ½ pack baking powder
  • 2 tablespoon cream curd
  • 6 apples, quartered, peeled and pitted
  • 2 tablespoon almond flakes
  • 3 tablespoon apricot jam

Instructions

  1. How Ivan got his name, nobody can say anymore. Even in the days of great-grandmother, it was called that and baked with preference when relatives came to visit, one of the children was sick or when the family blessing was simply wrong. Ivan is a comforter, a happier, nerve-strengthening and much more. Just try it. The special thing about Ivan: it is eaten warm with lots of fresh cream.
  2. Beat the egg whites until stiff and set aside.
  3. Mix the liquid margarine / butter with the egg yolks and sugar until frothy. Add the juice of a squeezed lemon and gradually stir in the flour, baking powder and salt, then mix in the cream quark until the batter is smooth. Finally, carefully lift the egg whites underneath.
  4. Put the dough in a greased springform pan lined with baking paper and smooth it out.
  5. Peel and core the apples and cut into quarters. Score the back with a kitchen knife in a grid pattern and press it into the dough in a circle.
  6. Bake at 200 ° C (do not use convection) on the first rail from below in the oven for about 60 minutes (after 40 minutes, cover with aluminum foil or baking paper if necessary). After baking, loosen the edge of the springform pan and place the cake with the baking paper on a wire rack to cool.
  7. Now bring about 3 tablespoons of apricot jam to the boil in a small saucepan and apply with a pastry brush. Then spread the almond flakes on top.
  8. Ivan is ready to eat when it is lukewarm - i.e. after about 30 minutes.
  9. Incidentally, Ivan is also very tasty cold. Even on the following day, it is still juicy and tasty.
