Ingredients

For the dough:

  • 300 grams flour
  • 1 packet baking powder
  • 75 grams sugar
  • 1 pinch (s) salt
  • 1 packet vanilla sugar
  • 150 g low-fat quark
  • 5 tablespoon milk
  • 6 tablespoon sunflower oil, or other neutral oil
  • 1 egg (s)

For covering:

  • 1 packet custard powder, vanilla
  • 500 ml milk
  • 25 g suar
  • 1 can apricot (s), half fruit
  • 2 tablespoon powdered sugar
  • Flour, for processing

Instructions

  1. Using the pudding powder, milk and sugar, cook a vanilla pudding according to the instructions on the packet and let it cool slightly.
  2. Mix the dry dough ingredients together, then add the remaining ingredients for the dough and knead well until a smooth dough is formed.
  3. With floured hands (the dough is very sticky) shape the dough into approx. 12 small balls, press flat and shape into an oval. Place on a baking sheet lined with baking paper. Please leave enough space as the dough will rise a lot. I always work with 2 sheets. Press a hollow into each of the ovals with floured hands or a wet tablespoon.
  4. Fill the wells with pudding (approx. 1 - 2 tablespoons per well) and place an apricot on top. I divide the fruits several times, otherwise they will be too big. If you are using whole fruits, you should make the balls bigger. The dough is then enough for approx. 8 XXL fried eggs.
  5. Bake in a hot oven at 175 ° for about 18-20 minutes. Let cool on a wire rack.
  6. Dust the edges of the dough with powdered sugar, covering the center of the eggs. I cut out a suitable oval from a piece of paper and put it in the middle.
