“Tenderness” Salad with Egg Pancakes

The name of this chicken salad alone speaks of its airiness and lightness. The “Tenderness” salad is prepared extremely quickly and extremely simply.

Ingredients

  • Chicken fillet – 350 g
  • Eggs – 2 pcs.
  • Fresh cucumber – 1 pc.
  • Purple onion – 1 pc.
  • Fresh dill – 1 sprig
  • Vinegar – 1 dessert spoon
  • Refined oil – for frying
  • Salad mayonnaise – 3 dessert spoons
  • Salt – a pinch

Directions

  1. Boil the fillet in salted water, cool, crumble in medium squares.
  2. Now you can start making egg pancakes. Break the specified number of eggs into a deep bowl, season with a small amount of salt.
  3. Shake eggs well with a whisk or fork, add finely chopped dill.
  4. Pour the egg mixture into an oil pan, fry on both sides until pleasantly golden.
  5. While the egg pancakes are cooling, you need to start cutting the rest of the salad. Wash the cucumber well, chop into oblong strips.
  6. Peel the purple onion, cut into small pieces, put in a bowl and pour over hot water, pour in vinegar, marinate for two minutes.
  7. Then cut the egg pancakes into thin strips.
  8. Mix all ingredients in one plate, season with salt.
  9. Add mayonnaise, mix well.
  10. Place in a nice plate, garnish with a sprig of fresh parsley.
