Ingredients

  • 8 squid (s) (squid tubes)
  • 1 bunch thyme, fresher
  • 6 cloves garlic
  • lots olive oil
  • salt
  • pepper

Instructions

  1. Have a bowl or baking dish ready. Wash and dry the squid tubes. Then wash the fresh thyme as well and shake it dry. Peel the garlic and cut into fine slices.
  2. Tuck one side of the squid tube with a toothpick, then fill the open end with 1 - 2 stalks of fresh thyme and a few slices of garlic (keep some of the garlic and thyme for later!). Add a pinch of salt and pepper and stick this side too.
  3. When all the squid tubes are filled, lay them out in the baking dish. Top with the retained thyme and garlic. Then season again vigorously with salt and pepper. Now pour the olive oil over the tubes - until everything is covered. Cover the whole thing with aluminum foil and let it sit in the refrigerator for about 3 - 4 hours.
  4. Now place the tubes in the pan or on the grill. Sear it on both sides. If the tubes get the desired brown color from the outside, they are ready (in no case under 6 minutes!).
  5. Tip: At high temperatures, the tubes lose water and shrink in size, so don`t be alarmed.
