Ingredients

For the dough:

  • 150 grams flour
  • 100 g butter
  • 50 grams sugar
  • 1 egg yolk
  • 1 pinch (s) salt

For the meringue: (protein mass)

  • 3 egg whites
  • 50 grams sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 pinch (s) salt

Instructions

  1. Knead the dough ingredients with 1 tablespoon of cold water. Let rest in the refrigerator for 1 hour. Roll out the dough thinly and cut out small circles that are slightly larger than a toffifee. Place one Toffifee on a circle with the curve facing up.
  2. Beat egg white and salt until stiff. Slowly stir in 3/4 of the sugar. Mix the cornstarch with the rest of the sugar and stir into the egg white mixture. Stir in lemon juice as well. Squirt the protein mass around the Toffifee with a piping nozzle and pull it up in the middle.
  3. Bake at 150 ° C for 20 minutes and then leave to cool in the closed oven.
  4. If you can control yourself, it is best to let it dry for 1 day.
