Ingredients

  • 250 g tofu, (silken tofu)
  • 1 tablespoon olive oil
  • 0.5 ½ medium cucumber (s)
  • 1 clove garlic
  • sea salt
  • Pepper, white, freshly ground
  • 1 squirt lemon juice

Instructions

  1. Wash the cucumber, dry it and grate it roughly. Sprinkle with a little sea salt and let the juice steep for about 10 minutes.
  2. Mix the silken tofu with the olive oil in a blender to a smooth mass. Squeeze the grated cucumber well and add to the silken tofu. Press the clove of garlic into the tzatziki with the garlic press and mix everything together. Season to taste with a little sea salt and pepper and add a splash of lemon juice to taste. This is important because the acidity rounds off the taste.
  3. Tzatziki tastes very good with (Greek) patties, baked potatoes, flatbread or other Mediterranean delicacies.
