Ingredients
- 8 small tomato (s), (vine tomatoes)
- 1 bunch rocket (or 80 grams tender spinach leaves)
- 1 small onion (s), white
- 1 tablespoon balsamic vinegar
- salt and pepper
- 2 tablespoon olive oil
- 100 g cheese, not too soft oat cheese

- Wash and slice the tomatoes. Wash and sort the rocket, shake the leaves dry. Peel the onion and cut into small cubes.
- Arrange the rocket on plates, overlap the tomatoes on top. Sprinkle with the onion cubes.
- Whisk together the vinegar, salt, pepper and oil, drizzle over the tomatoes. Crumble the cheese and spread over it.
