Egg yolk 2 pieces
Dijon mustard 1 teaspoon
White wine vinegar 1 teaspoon
Truffle oil 1 tablespoon
Sunflower oil 200 ml
Lemon juice 2 teaspoons
Salt pinch
Ground white pepper pinch
Truffles 1 piece
Directions
Place the egg yolks, mustard and vinegar in the mixing bowl. Add a pinch of salt and pepper (preferably white) and 1 tablespoon. a spoonful of truffle oil.
Place the bowl on a moistened towel and pour in the oil – the first drop by drop, then a little more lively, whisking all the time.
Pour in the oil in a continuous thin stream when the sauce begins to thicken, whisking constantly to keep the emulsion stable.
When all the oil has been added and the mayonnaise is thick, stir in the lemon juice and season to taste.
Add some finely grated truffles to the finished mayonnaise.
