Ingredients

  • 800 g turkey steak (s)
  • 100 g sesame seeds
  • 50 g macadamia nuts, peeled

For the puree:

  • 350 g cauliflower
  • 1 avocado (s)

For the mayonnaise:

  • 1 egg yolk
  • 0.5 teaspoon ½ white wine vinegar
  • 180 ml rapeseed oil, walnut oil or linseed oil
  • 0.5 teaspoon ½ Dijon mustard
  • 1 teaspoon xylitol (sugar substitute)
  • 1 teaspoon lemon juice
  • 1 teaspoon wasabi paste

Instructions

  1. Cut the cauliflower into equal pieces and cook in the vegetable stock, then drain.
  2. For the mayonnaise, mix the egg yolks, vinegar and mustard with a hand blender and pour in the oil. Until the mayonnaise loosens from the container, season with salt, pepper and xylitol. Stir in the wasabi paste and chill the mayonnaise.
  3. Put the sesame seeds in a shallow bowl. Chop the macadamia nuts and mix with the sesame seeds.
