Ingredients

  • 800 g potatoes (potatoes)
  • 200 ml chicken broth, hot, strong
  • 1 onion (s)
  • 0.5 ½ bunch chives, cut into rolls
  • 2 tablespoon mustard, medium hot
  • 2 tablespoon white wine vinegar
  • 4 tablespoon oil
  • salt and pepper

Instructions

  1. Cook the potatoes for approx. 20-30 minutes, peel them while hot and cut them into leaves. Finely chop the onion and mix it with the potatoes, add two tablespoons of mustard, season with salt and pepper, then pour the boiling soup over it. Stir in the vinegar and let the salad steep for at least an hour.
  2. Then add the chives, season to taste and, if necessary, season again.
