Ingredients

  • 1 ½ kg potato (s)
  • 2 onions)
  • 125 g bacon, lean, diced
  • salt and pepper
  • 3 bell pepper (s)
  • 600 g meat loaf
  • 4 egg (s)
  • 1 can corn
  • Paprika powder, red
  • olive oil

Instructions

  1. Cut the onions and bacon into small cubes, cut the peppers into thin strips, dice the meat loaf and drain the corn in a sieve. Peel the potatoes and cut into small slices.
  2. Put the olive oil in a pan and let it get hot. Add the onions and bacon and let it turn to glass. Add the potato slices and season with salt and pepper. Fry for 15 minutes, stirring occasionally. Then add the paprika strips, the meat loaf and the corn to the potatoes and continue to fry until the potatoes are done, turning over and over again. Season to taste with salt, pepper and paprika.
  3. In the meantime, fry the fried eggs in a separate pan. Place the fried eggs on the potato pan and serve immediately.
