I love savory pastries. What delicious yeast buns according to this recipe! Especially while fresh, still warm! Soft and tender, with a unique aroma, and on top of the buns are covered with delicious cracks. The secret of the appearance of these cracks is in the short-term scalding of the dough with boiling water with the addition of soda. Enjoy cooking!

Ingredients
For the dough:
Milk (cold) – 130 ml
Water (hot) – 130 ml
Vegetable oil – 75 ml + for greasing the baking sheet
Flour – 450-500 g (3-3.5 cups with a capacity of 250 ml)
Dry yeast – 7 g
Salt – 1 teaspoon
To sprinkle on buns:
Poppy – 1 teaspoon
Sesame seeds – 1 teaspoon
Sea salt – 1 teaspoon
Additionally:
Baking soda – 1.5 tbsp
Directions
Pour yeast into a bowl.
We pour in cold milk.
We pour in hot water. We mix. Add salt, vegetable oil and mix the ingredients in a bowl.
Sift the flour and add portions to the liquid mixture, carefully stirring each portion.
Knead a soft, smooth dough that does not stick to your hands. Cover the bowl with the dough with a towel and put it in a warm place for proofing for 1-1.5 hours.
As the time elapsed, the dough rose and increased in size.
Divide the dough into 12 equal parts and roll up the balls.
We form buns. To do this, roll out each bun with a flagellum.
Tie dough flagella in knots.
We hide the ends of the flagella inward. Thus, we form all the buns. Cover the baking sheet with parchment paper and grease abundantly with vegetable oil so that the buns do not stick to the parchment. We turn on the oven to heat up to 180 degrees.
And now the “secret”: pour 1.5 liters of water into a saucepan and bring to a boil. Pour 1.5 tablespoon into boiling water. spoons of baking soda.
Using a slotted spoon, each bun is alternately dipped into soda water for 5 seconds. (Such “bathing” of buns in a soda bath gives a crisp crust with appetizing cracks.)
After 5 seconds, take the bun out of the water and put it on a baking sheet. We spread the buns at a distance of about 2-3 cm from each other.
Sprinkle the buns with poppy seeds, sesame seeds and sea salt. We send the buns into a preheated oven and bake at 180 degrees for 20 minutes, until golden brown (be guided by the features of your oven).
The unsweetened secret buns are ready.
