Vegan Chocolate Orange Cake

Ingredients

300 g flour, (oranic spelled flour)
175 g raw cane suar
1 packet baking powder
1 packet vanilla sugar
250 ml soy milk (soy drink)
1 orange (s), including the zest and the pulp
125 ml vegetable oil
1 tablespoon lemon juice, alternatively orange juice
75 g dark chocolate, (without milk components)

For the glaze:

1 teaspoon coconut oil
100 g dark chocolate

Instructions

First, the flour and baking powder are sieved and then mixed with the raw cane sugar and vanilla sugar in a bowl. Then add the zest of the orange, the soy milk, the lemon juice and the oil. Mix well with the mixer. If the batter is too tough, add a little more soy milk.
Peel and fillet the orange. Chop the fillets and stir into the batter. Finally, chop the dark chocolate and mix it with the batter. Place in a springform pan lined with baking paper. Bake in the preheated oven for approx. 55-60 minutes at 170 ° C (fan oven). Please do a chopstick test, as each oven bakes individually. Take out and allow to cool before consumption. Makes 12 pieces of normal cake.
The cake can be covered with a dark chocolate glaze and a little coconut oil. To do this, melt both in a water bath and spread on the cooled cake.
