Vegetable Tortilla

This vegetable tortilla is cooked in the microwave, which allows you to prepare a quick and tasty dinner.

Ingredients

  • Fresh tarragon (chopped) – 30 g (2 tablespoon. L.)
  • Eggs (slightly beaten) – 4 pcs.
  • Olive oil – 30 g (2 tablespoon. L.)
  • Onions (finely chopped) – 1 pc.
  • Potatoes (peeled and cut into small cubes) – 450 g
  • Garlic (minced) – 1 clove
  • Zucchini (cut into thin slices) – 2 pcs.
  • Salt and black pepper to taste

Directions

  1. Add tarragon, salt, and black pepper to the beaten eggs. Set aside.
  2. Combine butter and onion in a heat-resistant form. Cover and microwave for 3 minutes. Remove the onion dish from the oven and add the potatoes, garlic, and zucchini. Cover and microwave again for 10 minutes, stopping cooking twice and stirring vegetables.
  3. Pour the beaten eggs over the vegetables, put in the microwave for 3-5 minutes. Meanwhile, preheat the oven with grill function.
  4. Remove the tortilla from the microwave and place it under the grill. Bake until golden brown.
  5. Cut the finished tortilla into portions and serve immediately.
