Ingredients

  • 500 g pork, lean
  • 2 tablespoon olive oil
  • 1 onion (s)
  • 1 clove garlic
  • 1 eggplant (s)
  • 2 small zucchini
  • 2 bell peppers, red and yellow
  • 5 tomato (s), peeled
  • 200 ml vegetable stock
  • salt and pepper
  • basil
  • oregano

Also:

  • some cream, amount as desired
  • some parsley, chopped

Instructions

  1. Cut the pork into bite-sized pieces (strips approx. 2 cm wide). Finely dice the onion and garlic and cut the vegetables into slices.
  2. Heat the olive oil in the pan and briefly sear the meat on all sides. Turn down the temperature a little, add the diced onion and garlic and fry lightly. Deglaze with the broth. Add the vegetables with the spices to the meat and simmer in a closed saucepan over a low heat for about 15 minutes. Refine with cream if you like, sprinkle with the chopped parsley.
  3. We eat sesame thalers as a side dish, and of course noodles, rice or just bread go with it.
