Walnut-Lemon Sweets with Raisins and Cardamom (in Chocolate)

Sweets Can Be Good! Try these delicious cashew and raisin sweets with lemon zest and juice in a chocolate glaze. They are prepared very simply. Grind nuts and raisins, roll into balls, and dip in melted chocolate. The light sourness of lemon and the oriental aroma of cardamom give zest and originality. I assure you, you will forget about store-bought desserts as soon as you prepare these delicious and simple sweets!

Ingredients

  • Cashew nuts – 70 g
  • Chocolate 56% – 60 g
  • Raisins raisins (light) – 25 g
  • Lemon – 0.5 pcs.
  • Dried cardamom (boxes) – 3 pcs.
  • or ground cardamom – 1 pinch

Directions

  1. Pour raisins and nuts with drinking water and leave for half an hour. They will swell a little and become softer.
  2. Drain and pat the raisins and nuts slightly with a paper towel.
  3. It is better to use ground cardamom. I didn’t find any ground, so I cooked it myself. Carefully open the cardamom boxes and place the seeds in the mortar.
  4. Grind the grains with a pestle into a fragrant powder.
  5. In a blender bowl, combine raisins and cashews, add a pinch of ground cardamom.
  6. Remove the zest from half the lemon using a fine grater. Save half to decorate the candy and add the remaining zest to the blender bowl.
  7. Squeeze 1 tablespoon of the lemon. spoon of juice and add to the blender bowl.
  8. Grind the contents of the bowl into a soft, homogeneous mass.
  9. Roll 8-9 balls from the resulting mass a little smaller than a walnut. It is convenient to do this with hands slightly moistened with water. Place the balls on the parchment and place them in the freezer for 30 minutes.
  10. For the glaze, the chocolate must be melted. Break the chocolate into small pieces.
  11. You can melt chocolate in a water bath or in the microwave on low power.
  12. Dip the frozen candy ball into the melted chocolate and cover it with chocolate on all sides.
  13. Place the candy on the parchment and garnish immediately with a pinch of lemon zest. Chocolate quickly solidifies on the candy, so you need to decorate it with zest right away.
  14. Place the chocolate-covered candies in the refrigerator for at least 1 hour.
