Ingredients

  • 200 g wheat flour
  • 200 g spelled flour
  • 25 g flaxseed
  • 50 g oatmeal
  • 25 g sesame seeds
  • 20 g sunflower seeds
  • 350 ml water, lukewarm
  • 1 teaspoon glucose
  • 1 ½ teaspoon salt
  • 1 cube yeast
  • coriander
  • possibly grains

Instructions

  1. Crumble the yeast and dissolve it together with the salt and sugar in lukewarm water.
  2. Mix all other ingredients and then add the yeast solution.
  3. Stir everything well with the dough hook (approx. 5 minutes) until a sticky mass is formed.
  4. You can add a little coriander if you want.
  5. If the dough is still too sticky, knead in a little more flour.
  6. Let the dough rise in a warm place until it has doubled (about 30-40 minutes).
  7. Preheat the oven to 175 degrees circulating air.
  8. Knead the dough well again and then put it in a bread pan. I always lay out these with parchment paper beforehand.
  9. If you want, you can sprinkle a few grains on the crust.
  10. Bake bread for 60 minutes at 175 degrees. Then let it cool down a little in the switched off oven.
  11. The bread becomes very fluffy with a wonderfully crunchy crust.
