White Asparagus Salad

A simple recipe for white asparagus salad will help you experience the real taste of spring and freshness. All the ingredients, except, perhaps, the asparagus itself, are very accessible, which also cannot but please;)

Servings: 3-4

Cook: 40 mins

Ingredients

  • White Asparagus – 0.5 Kilogram
  • Leguminous peas – 300 Grams
  • Chicken eggs – 1-2 Pieces
  • Greens – 50 grams (dill, tarragon, cilantro – which one you like more)
  • Mustard – 1 Teaspoon
  • Lemon – 1/2 Piece
  • Olive oil – 3-4 tbsp
  • Salt – To taste
  • Ground black pepper – To taste

Directions

  1. Peel the asparagus, remove the tough lower part of the stem, cut into 4-5 centimeters in size and boil in boiling water for 5 minutes. Turn off the heat and leave the asparagus in the pan for 15 minutes more.
  2.  Boil the green pea pods – literally 5 minutes so that they remain crisp!
  3. Boil eggs, fill with cold water, clean and cut into slices
  4.  Wash greens and cut (or tear by hand).
  5. Squeeze the juice out of half a lemon.
  6. Beat the olive oil with lemon juice, a couple of tablespoons of asparagus broth, mustard, salt, and pepper.
  7.  Put all the ingredients for the salad, except for the eggs, in a bowl, season, and mix. decorate with eggs on top and serve.
