Ingredients

  • 4 egg (s)
  • 400 g wheat flour (whole rain)
  • 250 ml milk, or almond milk
  • 100 ml mineral water
  • 100 ml orange juice
  • 1 packet vanilla sugar
  • 4 tablespoon thick juice (agave)
  • 1 pinch (s) salt
  • Maple syrup
  • Oil, or plant cream

Instructions

  1. First separate the eggs and beat the egg whites until stiff.
  2. Then mix the egg yolk and the other ingredients up to and including salt with a hand mixer and then fold in the egg whites.
  3. Heat the oil in a coated pan and add about three small portions of batter to the pan. Drizzle a few drops of maple syrup over the top while the batter is still runny. Now simply bake until golden brown on both sides. The maple syrup is baked in and caramelized.
  4. To serve, pour some maple syrup over the finished cake.
  5. If you like it sweeter, you can stir a little sugar or honey into the dough.
  6. Since the dough is not that runny, it is easy to portion.
