Ingredients

  • 70 g butter, soft
  • 2 egg (s), size L
  • 175 g semolina, (durum wheat semolina)
  • 45 g wild arlic, fresher
  • a bit salt
  • some pepper
  • some nutmeg, freshly ground
  • 2 liters broth

Instructions

  1. Cut the wild garlic very finely.
  2. Mix the softened butter well. Then stir in eggs, semolina, wild garlic, salt, pepper and nutmeg until smooth.
  3. Bring the broth (vegetable broth for vegetarians) to the boil. Cut off dumplings with two tablespoons, shape and add to the boiling broth. Switch back immediately and leave to stand with the lid on for 20 minutes.
