Zucchini and Pasta Salad

I learned how to make a zucchini and pasta salad when I was translating my menu into healthy rails. My motto was “vegetables instead of pork”! This is an interesting and satisfying salad, everyone loves pasta so much!

Servings: 4-6
Ingredients
- Vegetable oil – 2/3 Cup (deep fat)
- Medium zucchini – 3 pieces
- Wine vinegar – 1.5 tbsp
- Parsley – 1/4 Cup
- Olive oil – 1/3 Cup
- Basil – 1 Piece (bunch)
- Olive oil – 1/3 Cup (dressing)
- Pasta – 250 Grams
- Lemon zest – 1 Piece
- Mozzarella – 200 Grams
- Salt, pepper – To taste
Directions
- Prepare food.
- Boil the pasta.
- Cut the zucchini into rings.
- Fry the zucchini in oil.
- Put the zucchini on a towel to remove excess oil.
- Grind herbs with lemon juice, olive oil in a blender.
- In a bowl, combine mozzarella, basil, zucchini pasta.
