Zucchini Casserole with Meatballs and Cheese

There are many recipes for casseroles, in which zucchini and minced meat are the main ingredients. Today, one of the best options is a squash casserole with meatballs. In the context, such a casserole looks unusual thanks to meatballs drowning in tender zucchini. And it’s delicious, not to come off!)

Ingredients

  • Zucchini – 300 g (1 pcs.)
  • Minced meat – 300 g
  • Hard cheese – 70 g
  • Onions – 70 g (1 pcs.)
  • Bread crumbs – 2 tbsp
  • Egg – 1 pc.
  • Flour – 2.5 tbsp
  • Seasoning for meat – 0.5 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Butter (for greasing the mold) – 1 teaspoon
  • Fresh dill (for serving) – 1-2 branches

Directions

  1. Peel the onion and cut it into small cubes.
  2. In a bowl, combine minced meat, onion, 1.5 tablespoon. tablespoons of breadcrumbs, seasoning for meat (you can use any seasoning to taste), salt, and black pepper. Mix the minced meat thoroughly.
  3. With your hands moistened with water, roll the minced meat into balls the size of a walnut. I got 9 pieces.
  4. Wash the young zucchini, cut off the edges. Grate the zucchini on a coarse grater. Squeeze out the released juice.
  5. Beat an egg into a bowl with grated zucchini, add flour, salt, and black pepper. Mix everything.
  6. Grease a baking dish (I am using a 19×22 cm dish) with butter and sprinkle with the remaining breadcrumbs.
  7. Put the squash mass into the prepared form. Arrange the meatballs in rows on top.
  8. Place the mold in the preheated oven for 25-30 minutes. Grate cheese on a coarse grater.
  9. Remove the dish from the oven and sprinkle the grated cheese on the squash and meatballs.
  10. Place the casserole back in the oven and cook at the same temperature for another 7-8 minutes.
  11. Zucchini casserole with meatballs is ready. Cut the casserole into portions, sprinkle with chopped herbs, and serve hot or warm.
