Zucchini “Chebureks” with Ground Beef

A delicious dish of zucchini and minced meat, which I call “zucchini pasties”. I tried to cook them in different ways. With pre-fried minced meat, as for me, it turns out rather dry. I also tried adding minced meat and cheese. Still, what I liked the most was the recipe that I share here. It turns out very tasty and juicy. And it prepares quickly and easily – everything as you like!

Ingredients

For the test:

  • Zucchini (young) – 600 g (2 pcs.)
  • Milk – 50 ml
  • Egg – 1 pc.
  • Flour – about 100 g (2/3 cup, 250 ml capacity)
  • Green onions (green part) – a small bunch
  • Salt – 1⅓ teaspoon

For filling:

  • Beef (meat or minced meat) – 250 g
  • Water – 50 g (if necessary)
  • Green onions (the remaining white part) – a small bunch
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. We rub the zucchini on a coarse grater (I use an electric shredder).
  2. We shift the zucchini into a colander, add a teaspoon of salt, mix and leave for 10-15 minutes while we are busy with the filling.
  3. I always make minced meat myself – we cut 250 grams of beef into pieces and pass through a meat grinder.
  4. Finely chop the white part of the green onion and add to the minced meat. Add a little water for juiciness. If the minced meat is purchased, then the water does not need to be added, everything has already been added to it. Salt and pepper the minced meat to taste. We mix.
  5. Squeeze the zucchini. The more juice you can squeeze out, the less flour you add.
  6. Add the egg and finely chopped green onions. I also add some salt, since almost all the salt goes away with the juice – I add about 1/3 teaspoon of salt.
  7. Add milk. Now it’s the turn of flour – we introduce it gradually, you need 100-120 g, maybe a little more or a little less – look at the consistency of the dough (as in the photo).
  8. Put 1/5 of the dough in a heated pan (if the pan is with a non-stick coating, then it is not necessary to grease it with vegetable oil, if in doubt, grease it with a thin layer). We spread a few tablespoons of dough, level the dough into a round thin pancake.
  9. When the dough has set a little, we spread 1/5 of the minced meat on one side of it.
  10. We cover with the free part of the dough, trying to hold the edges together, level and fry over medium heat for 3-4 minutes on each side, until the minced meat is completely cooked inside.
  11. Let’s see what kind of zucchini “pasties” with ground beef inside. The minced meat is completely fried, it is quite juicy.
