Ingredients
- 500 g chicken breast, boiled, cut into strips
- 1 red pepper (s), cut into fine strips
- 1 green pepper (s), cut into fine strips
- 2 cloves garlic, finely chopped
- 1 onion (s), cut into rings
- 100 g mushrooms, fresh, finely sliced
- salt
- Peppercorns, green, pickled, pressed
- Paprika powder, hot
- Paprika powder, noble sweet
- 5 cl sherry
- 2 egg yolks
- 1 cup cream
- 1 tablespoon butter

- Steam the onion and paprika strips until translucent in hot, foaming butter. Scatter mushrooms and garlic. As soon as the mushroom juice has been absorbed, salt and season with the peppercorns and the two types of paprika. Perfume with sherry and pour in the cream. Put in the chicken breast strips, season to taste again and finally mix with the egg yolk.
- Serve with butter rice and lettuce.
