Ingredients

  • 500 g carrot (s), cleaned and sliced
  • 5 tablespoon water
  • 60 ml orange juice
  • 2 tablespoon mango chutney
  • 2 tablespoon butter
  • 1 ½ teaspoon ginger, fresh, grated
  • 0.5 teaspoon ½ garlic, finely chopped
  • 1 teaspoon curry powder
  • 3 tablespoon parsley, fresh, chopped, for garnish
  • Salt, to taste

Instructions

  1. Bring the carrots to a boil in a saucepan with the water, reduce the heat and simmer the carrots until soft for 7 to 10 minutes.
  2. While the carrots are simmering, put the orange juice, mango chutney, butter, ginger, garlic and curry in a saucepan and heat on the stove, the butter should be melted. Drain the finished carrots and add to the orange juice mixture, carefully combining everything. Season to taste, add a little salt if necessary.
  3. Garnish with parsley.
