- 150 ml cherry juice
- 1 teaspoon cardamom, whole capsules
- 1 vanilla pod (s)
- 2 tablespoon honey
- 3 large potato (s)
- 2 apples
- 2 egg yolks
- salt
- nutmeg

- some mint, fresh

- For the fig compote, peel and quarter the figs. Lightly toast the almonds in a coated pan without fat. Pour the cherry juice into a saucepan, press down the cardamom pods a little and add, boil the juice. Slit the vanilla pod lengthways and scrape out the pulp. Stir in the pulp and the pod with the honey and let the cherry juice boil down a little. Pour through a sieve, add the figs and almonds to the juice.
- For the apple and potato cakes, peel the potatoes and grate them finely. Squeeze out the potato mixture, collect the juice and set aside. Peel, halve, core the apples and grate them finely. Add to the potatoes, mix well and season with a pinch of salt and nutmeg each.
- Carefully pour off the potato juice while holding back the starch that has settled on the bottom and add to the potatoes. Stir in the egg yolks.
- Heat some oil in a pan and fry small cakes from the potato and apple mixture. Drain on kitchen paper.
- Arrange the fig compote with the cakes on plates and garnish with mint.
- Chocolate ice cream goes well with it.
