Mix the quark and mascarpone in a mixing bowl. In an extra bowl, whip the cream until stiff and fold into the quark mixture. Sweeten everything with any amount of vanilla sugar.
Place a layer of ladyfingers in a casserole dish (sugar side down) and soak with apple juice and calvados mixture (ratio 3: 1, but only works with apple juice). Then spread a layer of apple sauce on the biscuits and sprinkle with cinnamon sugar. Then apply a layer of cream.
Now repeat layer by layer up to the edge of the baking dish (finish with cream). Let the apple dream stand in the refrigerator for about 4 - 6 hours and sprinkle with cinnamon sugar before serving.
Tip: In autumn it is particularly useful to mix fresh apple pieces into the applesauce.
