Ingredients

  • 700 g apples
  • 50 grams sugar
  • 1 tablespoon lemon juice
  • 2 tablespoon rum

For the dough:

  • 200 g flour
  • 2 egg (s)
  • 125 ml apple juice
  • 125 ml white wine
  • 1 pinch salt
  • 1 lemon (s), organic, grated zest

Also:

  • Icing sugar for sprinkling

For the sauce: (vanilla sauce)

  • 500 ml milk
  • 40 g suar
  • 20 g cornstarch
  • 2 egg yolks
  • 1 vanilla pod (s)

Instructions

  1. Prepare the vanilla sauce first:
  2. Remove 2 - 3 tablespoons of the milk to mix the cornstarch. Bring the rest to the boil with sugar and the vanilla pod cut lengthways. In the meantime, mix the cornstarch with the retained milk and the 2 egg yolks. Remove the vanilla pod from the boiling milk. Strip the vanilla pulp into the milk and bind the liquid with the starch while stirring vigorously. Let the sauce boil a few times and then stir it cold.
  3. Battered Apple Cakes:
  4. Wash and peel the apples and cut out the core. Cut the apples into 1 cm thick rings, sprinkle them with sugar in a bowl, drizzle with lemon juice and rum and let them steep, covered.
  5. Put the flour in a bowl, add the eggs, apple juice, white wine, salt and grated lemon zest and mix everything together to form a thick batter. Let it soak for about 30 minutes.
  6. Drain the marinated apples well, pull them through the batter and fry them in the hot fat. Turn the cakes and bake until they are golden brown. Remove, let drain briefly on paper towels and arrange on a plate. Sprinkle with powdered sugar and serve immediately with the vanilla sauce.
