- 750 g potatoes, floury boilin
- 2 apples, e.g., Boskop
- 1 vanilla pod, which the pulp

- 1 tablespoon cornstarch (Gustin)
- 40 grams sugar
- 40 ml water
- 500 g strawberries, cleaned, halved
- 0.5 ½ lime (s), grated zest it

- 1 teaspoon pepper, green

- Peel and wash the potatoes and rub them in a tea towel; Squeeze out the potatoes well.
- Peel, quarter, core and grate the apples with the potatoes. Put the batter in a bowl and season with vanilla pulp, cinnamon, lemon zest and the zest of 1 orange. Stir in the egg and the Gustin and let the dough rest for 10 minutes so that the starch can swell.
- In the meantime, boil the sugar with 40 ml of water in a syrupy manner to make syrup sugar. Mix the halved strawberries with the syrup and the remaining orange peel. Stir in the lime zest and green pepper and marinate for 10 minutes.
- Heat the clarified butter generously in a pan and put in the potato heaps. Flatten them with a tablespoon and bake for 5 - 7 minutes on each side until golden brown. Bake 8-10 potato pancakes one after the other and let them drain off on kitchen paper. Arrange the marinated strawberries on the apple pancakes and serve.
