Ingredients

  • 500 g apples or 360 applesauce
  • 50 grams sugar
  • 1 stick cinnamon
  • 1 tablespoon lemon juice
  • 250 ml cream (Cremefine for whipping)
  • 4 teaspoon almond (s), sliced
  • cinnamon
  • some lemon balm

Instructions

  1. Peel and core the apples, then roughly dice them. Place in a saucepan with roughly 125 ml of water, 50 grams sugar, 1 cinnamon stick, and 1 tablespoon lemon juice. Bring to a boil over medium-high heat, then reduce to medium and simmer for 10-15 minutes until very soft. Remove from heat and let cool to room temperature, about 15-20 minutes.
  2. Remove the cinnamon stick and puree the apples with a hand blender until smooth.
  3. Beat the cream with a hand mixer for 3-5 minutes until stiff peaks form.
  4. Carefully fold the applesauce into the whipped cream, divide into 4 bowls, and decorate with sliced almonds, a pinch of cinnamon, and some lemon balm.
