Ingredients

  • 1 large can apricot (s)
  • 1 onion (s) or shallot
  • 1 clove garlic
  • 1 chilli pepper (s), red
  • 1 bunch spring onion (s), (primarily the green)
  • 1 teaspoon curry paste, green
  • some butter, or vegetable oil
  • salt and pepper
  • 1 teaspoon sugar, brown

Instructions

  1. Steam the very finely chopped onions and garlic in the hot fat.
  2. In the meantime, puree the apricots (without juice).
  3. Add the fruit pulp to the onion and garlic mixture in the saucepan and heat, stir in the curry paste and brown sugar. The amount of curry paste can of course be changed according to your own taste.
  4. Cut the chilli pepper and the spring onions into fine rings and add. Let everything get hot.
  5. This sauce was created by chance and tasted very good with cooked chicken and is also a real visual delight thanks to the play of colors: orange, green + red
