Cut the baguette lengthways and halve. Core the tomatoes and puree with a little basil and oregano. Then season with salt and pepper. Brush the baguette quarters with the mixture.
Drain and chop the tuna, then cover the bread with it. Core and dice the paprika, cut the onions into rings, finely chop the garlic. Spread everything over the fish. Pepper again, lightly salt and add the rest of the basil.
Cover everything with cheese and bake in the oven until the cheese turns lightly brown.
This is my typical use of leftovers. The baguette no longer has to be fresh and I always have everything else in the house (in case of an emergency).
You can also easily swap ingredients, e.g. paprika for cucumber.
