Ingredients

  • 500 g wheat flour type 550
  • 85 g sourdouh, Italian (Lievito Madre), straiht from the refrierator, otherwise another 5 yeast
  • 380 g water
  • 12 g salt
  • 3 g yeast, fresh

For painting:

  • 1 egg white
  • 2 tablespoon water
  • Flour for the work surface

Instructions

  1. Put the flour, water and Lievito Madre in a bowl and mix well with a wooden spoon. Cover the bowl and let it rest for 45 minutes. Then add the salt and yeast and work in with the dough hook on the lowest setting for 3 minutes.
  2. Let the dough mature for 3 hours, folding it after 60, 90 and 120 minutes. Then cover the bowl again and place the dough in the refrigerator (5 ° C) for 24-48 hours.
  3. It`s a very soft dough that takes a bit of skill to use, but it`s well worth it.
  4. Weigh the dough on the baking day, tip it onto a well-floured work surface and cut off three equal pieces. Flatten the pieces a little and roll them up. Let the dough pieces rest for 20 minutes. Then shape into baguettes. Line a baguette baking sheet with parchment paper. Place the baguettes in the wells and cover with a floured couch (dough cloth) or kitchen towel and cook for 50 minutes.
  5. Preheat the oven to 240 ° C top / bottom heat in good time. Slide a baking tray onto the base and heat it up with it.
  6. Whisk the egg white and water a little to brush.
  7. Cut the bread diagonally 4 times and immediately put it in the middle rack of the oven preheated to 240 ° C. Pour approx. 100 ml of cold water onto the hot tray pushed in at the bottom, so you get good steam. Close the oven door quickly.
  8. After 10 minutes of baking, take the tray out of the oven and brush the bread with the egg white water. Return to the oven and bake for another 10-12 minutes.
  9. I like to make double the amount of baguette and freeze some of it. So I always have baguettes in the house when I need one as a side dish. Bake in the oven for about 8 minutes at 190 ° C. Tastes like fresh out of the oven!
