Basic Recipe for Mass for Wafer Rolls

Wafer rolls are often used for ice cream and dessert. This is a recipe for dough for wafer rolls and baking them at home.

Ingredients

  • Egg white – 4 pcs.
  • Flour – 80 g
  • Powdered sugar – 80 g
  • Salt – 1 pinch
  • Vanilla sugar – 5 g
  • Milk – 4 tbsp
    or Cream – 4 tbsp
  • Vegetable oil for greasing a baking sheet – 0.5 tbsp

Directions

  1. Separate the protein. Salt.
  2. Whisk the lightly salted egg white together.
  3. Sift flour, icing sugar, and vanilla sugar and gradually stir into whipped egg white.
  4. Add milk or cream at the end. Mix. Preheat the oven.
  5. A baking sheet (or better a silicon substrate) must be greased with oil. The mass for waffle sticks is well spread in a layer about 2 mm thick on a baking sheet greased and, if desired, lightly floured. It is better to make the waffles small – a tablespoon of dough should be distributed in a circle with a diameter of about 15 cm. You need to bake 2-3 waffles at a time. The first stage: the waffles need to be put in the oven and oven at 200 degrees for 5 minutes.
  6. So that the edges of the wafer rolls do not darken when baking, the mass is baked in two stages: shortly before the end of the baking time, the baking sheet is removed to evaporate the moisture (for 1 minute), and then put in the oven again for a short time (for another 1 minute).
  7. As long as the baked product is still hot, it can be bent or even rolled into a tube. Likewise, you need to bake the rest of the waffles.
  8. After cooling, the wafer rolls become crispy and remain crispy when stored in a dry, well-sealed box.
