Ingredients

  • 600 g mushrooms
  • 4 medium onion (s), chopped
  • 4 cloves garlic, pressed through
  • olive oil
  • salt
  • pepper
  • sugar
  • 5 sprigs rosemary
  • 0.5 dl ½ vegetable stock
  • 0.5 dl ½ vinegar (basil vinegar, alternatively aceto balsamico)
  • 4 tablespoon basil, chopped

Instructions

  1. Fry the onions, garlic and mushrooms (whole or halved, depending on size) in hot olive oil and season with salt, pepper and a little sugar. Add the broth, vinegar and sprigs of rosemary.
  2. Cover and simmer over low / medium heat for about 10 minutes.
  3. Remove the rosemary, add the chopped basil, stir, season again if necessary, leave to rest briefly.
